Spring is here! Finally, after months of brutal whipping winds, gray skies, boredom, and a lackluster complexion, the good sun is gracing my life once again.  And of course, along with warming up the parquet floors, the sunbeams are also choosing to highlight unflattering lumps and bumps from winter feasting.

That’s okay, though, because I intend on consuming lots of dishes like this springlicious Spinach Salad With Chicken, Avocado and Goat Cheese from RecipeGirl. A salad like this will reveal my waistline soon enough (and also help to alleviate that latent sugar-guilt I keep experiencing). The crisp spinach is balanced by the butteryness of avocado and pine nuts, and the dressing has a nice kick of Dijon, as well. It’s healthy and filling enough for dinner, and will even satisfy the manly man’s appetite.

Who is RecipeGirl, who can pull such feats as this? She is Lori Lange, a prolific recipe developer and food writer based out of Southern California. With over 2500 recipes indexed on her site, it’s no wonder she has a cookbook due out in 2013. If it includes recipes like this Easy Beef Enchiladas, it should definitely be a hit. I’d only had enchiladas twice in my life before, the last time dating back at least 10 years, but I’d never forgotten them (yes, I long for food). This recipe was my first time making them and, wow, my kitchen smelled like Mexican heaven. The homemade enchilada sauce is quick and easy, too. If you’ve never cooked with corn tortillas before remember to wrap them in a damp cloth and microwave them so they become soft before stuffing and rolling. I learned the hard way that if you skip that step, they’ll crack and break apart on you. So now you know.
