My Darling Lemon Thyme

Mmm...drizzle this dairy-free chocolate sauce on everything!

I have a friend who likes to make everything an adventure. She can’t just go for a walk; it’s got to be a hike involving a makeshift bridge or two. A vacation doesn’t involve suitcases and room service; it’s a chance for her dig out her backpack and travel books. When she’s in the kitchen there’s no such thing as straightforward, either. This is where we are similar. We both like to eat as healthily and as much from scratch as possible. For us it’s about knowing what’s in our food; for her, especially, it’s because she can’t eat gluten or dairy. So when I discovered Australia’s My Darling Lemon Thyme, I knew that it’d live up to my friend’s culinary expectations and adventurous spirit.

Emma Galloway is a former chef who discovered five years ago that she and her children are gluten and lactose intolerant. As a result, Emma started My Darling Lemon Thyme to share her gluten- and dairy-free vegetarian recipes. Emma’s goal is to break down the stigma that allergy-free eating is boring and flavourless. She definitely makes her point with this addictive Dairy-free Chocolate Sauce. I firmly believe that chocolate sauce should always be readily available, whether it’s to drizzle over ice cream, fruit slices, granola, or just to dip your finger into.  Made with coconut cream and maple syrup it is, in my opinion, miles better than your usual dairy counterpart. There's always time for curry, even when it's hot out.

One of the things I like best about My Darling Lemon Thyme is the Basics section. Here, you can learn how to make your own kefir, labne (an alternative to cream cheese), and even almond milk to name a few. For this Eggplant Curry Emma shows you how to make your own ghee for the recipe, which is a great lactose-free alternative to butter. Wonderfully aromatic, this dish tastes even better the next day after the flavours have had a chance to really mingle.

Emma and her family have, over time, reintroduced small amounts of dairy back into their diet, so you’ll find yogurt and feta cheese in some recipes, like in this colourful Black Bean, Corn & Coriander Salad. This summer salad makes a nice side dish or as a main — I had mine with some grilled prawns on top. Easy to make, it’d be great to bring to a picnic or bbq. Sugar Friday: Homemade Oreo Cookies

Enjoy the weekend one dunk at a time.

I’ve always wondered what it is about the weekend that make some people want to…work. When the weekend rolls around the last thing I’m thinking of is cleaning out the garage or washing the windows. What’s on my mind is a well-deserved cocktail and something sweet. If you’re inclined to draw up to-do lists on Friday, I’d like to suggest my idea of a weekend project: Homemade Oreo Cookies.

Oh, I know you’re excited. These cookies elicit the same excitement as store-bought ones, if not more, because your kitchen will become a magnet and no one will want to leave until the last cookie has been dunked. The oreos have the perfect balance of chocolate and sweetness; the cookies are a touch salty, which complements the sugary vanilla filling. Thank Stephanie Eddy, whose baking blog Clockwork Lemon, is actually a to-do list of things she’s always wanted to bake. Clockwork Lemon, which is based in Calgary, Alberta, focuses on baking from scratch, and here you can learn to bake all sorts of things ranging from pies to breads to marshmallow fondant. There are also handy decorating and tutorials sections. Now, what’s on your weekend to-do list again?
