Sugar Friday: Homemade Oreo Cookies

I’ve always wondered what it is about the weekend that make some people want to…work. When the weekend rolls around the last thing I’m thinking of is cleaning out the garage or washing the windows. What’s on my mind is a well-deserved cocktail and something sweet. If you’re inclined to draw up to-do lists on Friday, I’d like to suggest my idea of a weekend project: Homemade Oreo Cookies.

Oh, I know you’re excited. These cookies elicit the same excitement as store-bought ones, if not more, because your kitchen will become a magnet and no one will want to leave until the last cookie has been dunked. The oreos have the perfect balance of chocolate and sweetness; the cookies are a touch salty, which complements the sugary vanilla filling. Thank Stephanie Eddy, whose baking blog Clockwork Lemon, is actually a to-do list of things she’s always wanted to bake. Clockwork Lemon, which is based in Calgary, Alberta, focuses on baking from scratch, and here you can learn to bake all sorts of things ranging from pies to breads to marshmallow fondant.
