Growing up, my mother always had a bakery box on our kitchen counter for us kids to snack from (surprisingly, none of us ever developed sweet tooths as adults). The best was when she brought home chocolate éclairs, which were my favourite. It’s been years since I’ve had one, but once I made these fabulous Strawberry-Basil Éclairs from Chasing Delicious I fell in love all over again. The dough, a simple pâte à choux, is filled with Bavarian cream and juicy strawberries that have been macerated with lemon zest and basil.
It’s all the culinary mastermind of Russell van Kraayenburg, writer, photographer, and media extraordinaire whose Texas-based blog was recently nominated for best dessert/baking blog by Saveur magazine (yeah, that’s some serious street cred). Russell’s thoughts, feelings, and observations about life, his surroundings, and food come alive through his words and stunning photography.
The éclairs are unforgettable and are a refreshing change from the traditional cream and chocolate. These are sweet, zesty, and fragrant (I couldn’t help myself and drizzled them with chocolate sauce). Anything French intimidates me, but these éclairs are seriously easy to make and assembling them is fun. I followed Russell’s suggestion to make the cream a day ahead. Try these—I promise you’ll love them and everyone else will, too. Like all great loves, I’ve now decided that I’ll never be without éclairs again.
